Who doesn’t love chocolate chip cookies?? I know that I do. These days, I find it pretty easy to pass up a lot of desserts, but a little bit of chocolate (especially dark) is just needed sometimes. I’m not ready to lose my progress for one cookie… So I make these quite often.
I posted this cookie recipe on my Instagram account just over a year ago. Many of my friends could tell you that I take them to events all the time and people don’t realize they’re a healthier choice cookie. They do have a light coconut flavor due to the oil, but I’m not a coconut fan and still love these so it’s not drastic. I form the dough into slightly flattened 2″ cookies & bake them in the oven at 350 for about 12min. Important note is you want your coconut oil the texture of softened butter… Melting it will make forming cookies very difficult (but possible- I’ve done it both ways). Carob chips would really clean up the recipe but a little dark chocolate is yummy!
