Chocolate Peanut Butter Protein Popcorn


Anyone else obsessed with peanut butter and chocolate? No? Just me? 😝 I doubt it. Healthy alternative recipes for desserts make all the difference for me to stay on track some days. Today I was craving peanut butter and chocolate so I had to think of a sweet treat that wouldn’t steal too many of my day’s calories!

Ingredients:

10 cups popped corn (about a bag)

1tbs coconut oil

1tbs unsweetened cocoa

1tbs honey

16 dark chocolate chips

.5 scoop chocolate whey protein powder

.25cup natural peanut butter 
Pop popcorn if necessary ( I happened to have pre-popped so I used that to avoid any stray kernels) and pour into a large bowl. Place coconut oil, cocoa, honey, chocolate chips, and protein powder in a small bowl and stir up a bit. Melt in microwave in 15sec intervals, stirring in between. You want it all to get melted but doesn’t need to be piping hot. Melt peanut butter in a separate bowl. Drizzle peanut butter on the popcorn and stir to coat. Next, drizzle melted chocolate mix, again stirring to coat. Spread popcorn on a parchment paper lined pan and refrigerate until hardened. 

Since coconut oil and peanut butter are the hardening aspects of this recipe and they both soften at room temp, this isn’t something you would mail off for family Christmas gifts. It can be messy-fingered to eat, unless you devour it like me. BUT it’s good. And macro friendly! 

One cup is 110 calories, 7g fat, 9.5g carb, 4g protein.
